  • Is this class suitable for beginners?

    Yes — this class is suitable for beginners to isomalt, as well as those who have tried the material before and want to improve consistency and control. It is recommended that you already have experience with basic cake construction, and covering, including stacking and dowelling tiered cakes.

  • Can I use isomalt on buttercream cakes?

    This class has been designed and demonstrated on fondant-covered cakes, as fondant provides a more stable, low-moisture surface for isomalt work and gives the most consistent results. While isomalt can be used on buttercream cakes, buttercream cakes typically require refrigeration, and moisture and condensation can affect isomalt over time, leading to issues such as stickiness, clouding or loss of clarity. For this reason, all techniques in the class are taught on fondant cakes.

  • What will I learn in this class?

    You will learn how to create sculptural isomalt elements with improved clarity, stability and control, along with techniques for reducing common issues such as clouding, yellowing and inconsistency. The focus is on building adaptable techniques you can apply across a range of designs.

  • I’ve tried isomalt before and struggled with it — will this help me?

    Yes. This class is inspired by your questions! I have designed it to address common challenges such as clouding, drooping and unpredictable results, and focuses on improving consistency and control in a practical way.

  • What do I need to take this class?

    You will need basic cake decorating equipment, isomalt, and standard tools used for sugar work. A full equipment list is included in the class materials. Some specialist equipment is optional.
